
This amazing carrot cake with Bourbon + Vanilla cream cheese frosting is the perfect treat for spring!
Mix together
2 1/4 cups gf one to one flour or all purpose flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoons salt
2 teaspoons avocado oil
3/4 cups sugar
1/2 cup brown sugar
2 eggs
1 teaspoon apple cider vinegar
1/2 cup milk
2 cups grated carrots.
Mix all ingredients except for carrots until well combined. Then slowly fold in grated carrots until fully incorporated.
Grease two 8 inch cake pans and line with parchment paper. Divide the batter between the pans and bake for 40 mins at 350 degrees. Allow cake to cool fully before frosting.
Frosting:
Beat together 6 tablespoons of butter, juice of 1/2 an orange, 1 block of cream cheese and a 1/2 cup of bourbon + vanilla maple syrup until fluffy.
Frost the cake and serve with any additional toppings you’d like!
