Our story.
Hi, we’re Austin and Madeline Miller, the owners of Under The Bark Syrup Co.
We live in Lonsdale, Minnesota on a 61-acre homestead we purchased in October 2023, where we’re raising our two daughters and building a life rooted in sustainability, family, and craftsmanship.
Our business began in 2011 under the name Three Rivers Farm, founded on a simple idea: make the world a little healthier through the love of pure maple syrup.
What we believe.
We believe maple syrup should be more than just a topping, it should be a natural, everyday alternative to processed sugars.
Our goal is to create products that are simple, intentional, and better for you. Everything we make is guided by a commitment to sustainability and thoughtful sourcing.
Our ingredients.
We’ve been actively working to transition our ingredients to local, organic sources whenever possible.
We’re currently searching for high-quality, organically produced:
Ginger root , Ghost peppers ,Coffee beans

Why our syrup isn’t certified organic.
This is a question we get a lot.
For maple syrup to be certified organic, the surrounding area (within a 10-mile radius) must be free from pesticide exposure. In the Midwest, where farmland is abundant and conventional farming is common, that’s incredibly difficult to guarantee.
Because of that, we can’t officially label our syrup as organic — even though we follow thoughtful, responsible practices.
That said, we’re actively working toward sourcing certified organic maple syrup options in the future.
