Long story short, we don't use the grading system too strictly. We use what's equivalent to a grade A Amber but mostly just go by taste and color. We look for a rich, bold, smooth and extra sweet flavor to make sure our syrup doesn't just look the same consistently but that it also tastes the same!

Our company was founded in 2011, where we were tapping trees and selling the syrup, but we shifted that a few years ago because we started selling more than we could produce. We now use a producer in Wisconsin, who allows us to help him tap 3000 trees every spring!
